Dear Reader,
Tomorrow I'll start featuring the winners in this year's Write a DearReader Contest. I personally called each of the three winners to say "Congratulations!" and find out more about them. Calling the winners and giving them the good news is a lot of fun because either there's a long, silent pause on the other end of the phone, or if they're at work and sharing the news with their co-workers, I hear a few minutes of "I won! I won! I won!" It's a delightful call I look forward to every year. Be sure to tune in Tuesday, Wednesday and Thursday to read this year's winning entries. And throughout the upcoming weeks I'll be featuring Honorable Mention pieces, too.
If you want to get started writing, or have been writing for years, my journal giveaway is just for you. If you missed entering the drawing, today's the last day to enter, click here.
Last week I mentioned that I don't have a good recipe for peanut butter cookies and I asked readers to share their favorite. Book club reader Kathleen V., sent me a recipe (below), and so did numerous other readers, so it must be a good one. I like it because it looks really easy to make.
Good Morning Suzanne!
This is a very simple one that I have used for years. I can make it for my friend who has celiac, or my daughter who is lactose-intolerant. It is adaptable and you almost always have the ingredients on hand.
1 cup peanut butter (don't use the "natural" type of peanut butter, a brand like JIF seems to work best)
1 cup sugar
1 egg
Scoop all ingredients together. Press with a fork twice to make crisscross marks, and bake at 350 for about 9-12 minutes.
You can add tsp vanilla, or a pinch of sea salt, or chocolate chips. My family's favorite is with a chocolate kiss pressed in the center as soon as it comes out of the oven.
I like your oatmeal raisin cookie recipe--going to give it a try today! Good rainy day here in southern Arkansas for baking!
-- Kathleen V.
Thanks for reading with me. It's so good to read with friends.
