Dear Reader,
Today's column started when my husband forwarded an email to me...
"Eating black beans can practically save your life. Okay, so I may be exaggerating a bit, but the current poop on black beans is they're number one for cardiovascular health, a nutritional powerhouse chocked-full of calcium, magnesium, iron, manganese, copper and zinc. No more constipation, and if you want to lose weight and reduce your waist circumference, start eating those beans."
Who can I attribute that quote to? I have no idea, my husband cut and pasted the info from something he read. Nevertheless, this girl loves black beans and it seemed to me that all those benefits sounded reasonable, so I decided to Google black bean recipes.
My theory about eating healthy is If I'm eating something that's good for me, it gives me an excuse to eat something that's not so good for me. I call that a balanced diet. So when I Googled black bean recipes, and the first one to pop up on my computer screen was Black Bean Brownies, it satisfied both of my qualifications for a balanced diet--I had a winner!
I haven't made the recipe yet. It doesn't look difficult. The most important step seems to be--whirl those black beans around in a food processor--the author of the recipe says "really blend well...and the taste will be much better." Okay, so that scares me just a little bit.
But what even has me more worried is the instruction, "Add 2/3 cup chocolate chips. Not optional. Omit at your own risk!"
I don't know. I'm still working up the courage.
