"Suzanne: My parents served over 40 years as officers in The Salvation Army, including responding with disaster trailers to serve the first responders to natural and manmade disasters, including hurricanes. During the early years of their service, my mother devised a very simple soup, which she named Hurricane Stew, to serve to the emergency workers and displaced persons. I grew up with this as a family recipe, and it still is what my mother makes for my birthday, as part of my gift! I hope you will enjoy it.
Hurricane Stew
1 pound beef chuck or stew meat
3 russet potatoes
1 large can whole tomatoes
1 small can lima beans
1 small can whole kernel corn
Cook the beef in enough water to cover it in a Dutch oven. When the beef is cooked, remove it from the pan to cool, and cook the potatoes, which have been peeled and cut into small cubes, in the beef broth in the pan. When the potatoes are cooking, put the tomatoes in a blender (and be sure to put the lid on, Suzanne!), and pulse until fully liquefied.
Once the potatoes are tender, add the tomatoes to the pot. If using stew meat, go through the cubes to remove fat and gristle and to cut the cubes into smaller pieces. If using beef chuck, follow the same procedure to make small cubes of beef. Return the beef to the pot, and add the drained cans of lima beans and corn.
Let simmer for 20-30 minutes to combine flavors and serve. Since we're from the South, we usually serve it with hush puppies, but cornbread of any kind would be good, too. Enjoy!"
