Dear Reader,
"Good morning, can you continue to post soup recipes?" Shelvia wasn't the only book club reader asking for more soup recipes, so below is another on my list to try.
"Hi Suzanne, this soup was regularly on the menu at L.S. Ayers Tea Room in Ayers Department Store downtown Indianapolis, Indiana. Although the department store closed its doors, as so many wonderful stores from childhood have, the memories are still there to relive. Magically, the Tea Room still exists in a functioning re-creation at the Indiana State Museum. Chicken Velvet Soup is on the menu, along with many other elegant dishes famously served at the Tea Room.
CHICKEN VELVET SOUP
3/4 cup butter
3/4 cup flour
1 cup warm milk
1 pint hot chicken stock
1 cup warm cream
1 quart chicken stock
1 1/2 cups chopped, cooked chicken
1/4 tablespoon salt
1/8 teaspoon pepper
Combine butter and flour, blending well. Add warm milk, pint of hot chicken stock, and warm cream. After cooking well, add remaining ingredients. Yield: 2 quarts
It is definitely velvet on the tongue! Since the very first time I made this soup, it has been the most requested soup in my household. As it is so simple to prepare, I regularly have it on hand.
