Dear Reader,
My brother-in-law gave me an aluminum-cased recipe book from the 1930s, and today I'm trying one of the recipes. The woman who used to own the cookbook made a handwritten note that this chicken recipe was "Delicious!" So today I'm giving it a try. Let me know if you try it, too.
"Delicious" Chicken Casserole
2 cups cooked rice
6 tablespoons margarine/butter
1 teaspoon salt
2 cups chicken broth
1 cup milk
3 cups chicken, cooked, cubed
1/2 cup toasted, chopped almonds
2 tablespoons minced pimento
6 tablespoons flour
1/8 teaspoons pepper
Melt margarine, stir in flour, salt and pepper. Gradually add chicken broth and milk. Cook, stirring constantly until smooth and thickened. Place in alternate layers in casserole cooked rice and chicken mixture. Sprinkle over each layer some almonds and some pimento. Cover top with buttered bread crumbs.
Bake at 350 degrees for 45 minutes.
