Dear Reader,
I'll be in Wisconsin attending my oldest granddaughter's graduation this coming week, but I'm leaving you with some outstanding guest author columnists, and one of my favorite recipes.
In fact, I served this recipe at my BINGO Birthday party two weeks ago. It's one of those simple dishes that looks like I spent hours in the kitchen, but it's surprisingly easy.
Simply saute vegetables earlier in the day, cook your pasta 15 minutes before serving, drain it, then dump the rest of the ingredients on the pasta, and the dish cooks itself. It's a perfect last minute main course and my birthday guests asked for the recipe.
Pasta Verde
4 eggs
1/4 cup whipping cream
6 tablespoons butter
1-1/2 cups sliced fresh mushrooms
1/2 cup finely chopped onion
10 ounces broccoli steamed, or cook a package of frozen
12 ounces hot cooked linguine, fettuccine or other pasta
1 cup grated Parmesan cheese dash pepper
Let eggs, whipping cream and 3 tablespoons butter stand at room temperature for 2 to 3 hours. Cook in skillet, mushrooms and onion in remaining 3 tablespoons butter until onion is tender. Stir in cooked broccoli, heat through.
Beat together (by hand) eggs and whipping cream just till blended.
Toss pasta with the softened butter. Pour egg mixture over and toss till pasta is well coated. Add broccoli mixture, Parmesan cheese and pepper.
Serve immediately.
Serves 8 dinner portions.
