If you're looking for a simple, impressive dish for dinner, my recommendation is Honey Mustard Chicken. Here's the recipe:
Honey Mustard Chicken
2 tablespoons cornstarch
14 ounce can chicken broth
1 tablespoon honey
1 tablespoon coarse-grain mustard or your favorite, but not yellow mustard
4 skinless, boneless chicken breast halves
1 cup carrots, cut matchstick size
1 medium sweet onion sliced
4 cups cooked rice (I used the microwave rice packets)
Mix cornstarch, broth, honey and mustard in a bowl until smooth. Set aside.
Spray skillet with non-stick spray, sprinkle chicken with seasoned pepper (or your favorite pepper) and then brown chicken on both sides. Approximately 10 minutes. Set chicken aside.
Stir cornstarch mixture and cook over medium high heat, constantly stirring, until it thickens. Pour mixture over chicken, add carrots and onions. Cook over low heat in a covered pan until chicken is no longer pink. Serve with rice.
