Looking for something to do with leftovers? Book club reader Carolyn Savory has the recipe for you.
"Suzanne, my mother always made a turkey leftover casserole that we thought was better than the real deal! We looked forward to it, if not on the day after Thanksgiving, then that weekend. Never fail. Still a favorite of my daughter and now I fix it for her.
Dice up leftover turkey
Crumble up the leftover dressing
Layer the dressing in the bottom of a baking dish
Layer with the diced up turkey
Add sweet potatoes or mashed potatoes (or both) on top of turkey and dressing
Pour leftover gravy or a store bought gravy over everything (usually I heat this up before I pour it over the ingredients in the dish)
Top with a can of favorite biscuits. Bake until the biscuits are brown. Serve with additional leftover gravy. Super yummy!" --Carolyn
